Sotol · Agave Distillates
Sotol is made from the Agave’s cousin, Dasylirion; the Desert Spoon. Relative to the crispness of Tequila or often-smokiness of mezcal, sotol tends to be a bit brighter and more vegetal. Agave Distillates are agave-based spirits found outside the designations of sotol, Tequila, or mezcal.
